Craighead George also published a cookbook of her mountain favorites--Acorn
Pancakes, Dandelion Salad and 33 Other Recipes. This recipe for acorn
pancakes comes from this
book.
Ingredients: (1)
one-half cup of white flour; (2) one cup of acorn flour; (3) two and one-half teaspoons
of baking powder; (4) one-quarter teaspoon of salt; (5) one egg--beaten; (6) 10 ounces
of milk; (7) three tablespoons of butter. You will also need butter, margarine or oil
for your skillet or frying
pan.
Directions: You will need
two separate bowls and a frying pan. Mix the white flour, acorn flour, baking powder and
salt in one bowl. In the second bowl, combine the butter, egg and milk. Combine all of
the mixtures together and stir lightly. Spoon the mixture onto the hot skillet. Flip
once after bubbles appear on the surface.
The author
suggests serving the finished product with "maple syrup or wild
jellies."
